Easy Coconut Cool Whip Cookies

In the words of my husband, "These are the best Summer Cookies ever!" I can't take too much credit for it. Sure, I stirred them and baked them, and picked the Coconut flavor, but the recipe for these Cool Whip Cookies came from my friend Shell at Things I Can't Say.

Of course, as soon as I saw it, I had to Pin it to my "Recipes to try" board on Pinterest. Seen here in Shell's Pink Lemonade flavor.




These cookies are so simple, even for a lazy baker like me. (Let's just say I like to eat home baked more than I like to bake home baked.) You just stir together a tub of cool whip, 1 egg and whatever flavor cake mix you want. I used Coconut because I wanted a Summer taste, (and because my hubby is a coconut fiend! I think he'd lick the walls clean if they were covered in coconut!)


After it's all mixed, you just roll teaspoon size dollups in powdered sugar. I'm lazy, so I did the first one as more tablespoon size, (I want to eat the cookies not stand around waiting on multiple cookies sheets to bake,) and they came out good, but, really the smaller ones had more fluff. So, worth the extra time to do it right, but just as good if you're in a hurry.)

I'm a terrible judge of volume, so the bowl has way too much powdered sugar. Trust me, you won't need that much.

Bake on a parchment lined cookie sheet. (I ran out of parchment paper after the first cookie sheet, and the others came out fine, but I was stuck having to scrub the cookie sheet, and I hate scrubbing...ANYTHING! So, parchment paper is highly recommended (unless you're one of those clean freak people, and then have at it...Scrub yourself crazy!)


Coconut Cool Whip Cookies


These are truly delicious! They are so light and soft and fluffy with just the right amount of crisp on the outside. I really want to try it with a strawberry cake mix, but, I think there's another coconut batch in my very near future. (Hubby already bought more Cool Whip.) I think I'll roll the next ones in shredded coconut to kick it up a notch, that oughta make him happy!

1 egg
1 box cake mix (any flavor)
1 small tub of Cool Whip

mix, roll tsp size balls in powdered sugar
bake on un-greased cookie sheet 350degrees 12-13 minutes
