I think everyone has some special food or treat that brings back sweet memories of childhood. For me, it's "Rice Krispie treats", but not what you may think of as "Rice Krispie treats".
"Rice Krispie treats" were made for me by my Gramma twice a year; my birthday, and Christmas. They were my favorite, and they were the first food I ever learned to make. Helping Gramma to stir the peanut butter and melt the chocolate is one of my great memories of childhood and the holidays.
Yes, that's right, my "Rice Krispie Treats" have chocolate. I never even knew of the marshmallow "Rice Krispie Treat" until I was married. So, imagine my husband's surprise the first time, I made "Rice Krispie Treats" and they looked like this:
Not exactly what he was expecting! And, Not a bit of marshmallow in them! But, oh are they good!
With a bake sale for charity at work tomorrow, I needed something quick to contribute, so, along with some Peppermint Bark, Gramma's Krispies seemed like the perfect thing to make, tonight. Hopefully the chewy chocolaty butterscotch and peanut butter treat will be just the thing to raise some money.
My oldest daughter helped me just like I used to help Gramma, including the most important part...licking the spoon. :)
Chocolate Butterscotch Peanut Butter Krispies |
1 cup corn syrup 6 cups Rice Krispies cereal
1 cup sugar 1 1/2 cup semi sweet chocolate chips
1 cup peanut butter 1 1/2 cup butterscotch chips
In large sauce pan on medium heat, combine sugar and corn syrup. Stir until liquid runs clear.
Stir in peanut butter. remove from heat and stir in rice krispies. Spread mixture in jelly roll pan.
Melt chocolate and butterscotch together and spread on cereal mixture. Cut into squares and allow to cool before serving.
