Delicious Strawberry Coconut and Banana Coconut Muffin Recipe

I absolutely love coconut! So when I saw a recipe for Blueberry Coconut Muffins on my package of unsweetened coconut flakes, I got super excited. Not because I wanted to make that recipe exactly, but because it gave me an idea for another kind of Coconut muffin...Banana Coconut Muffins! Now, doesn't that just sound yummy?! Oh, they were!!

After making these, I thought 'well, why not try Strawberry Coconut Muffins?'

And, you know what?! They were even better!

Ingredients

·         1 cup bananas (mashed) or Strawberry (diced)

·         1-1/2 cups Unbleached White All-Purpose Flour

·         1/2 tsp Sea Salt

·         1 tsp Baking Soda

·         2  Eggs

·         3/4 cup Sugar

·         1 tsp ground Cinnamon

·         1 stick butter (melted)

·         1/2 cup heavy cream

·         1/2 cup Coconut Flakes (add 1/4 cup extra if doing strawberry)

·         1 tsp Baking Powder

·         1 1/2 tsp Vanilla Extract

Preheat oven to 350°F and line muffin pan with paper cups.

Beat together butter and sugar until light and fluffy. Beat in eggs. Beat in cream and vanilla, then add flour, baking powder, baking soda, salt, and cinnamon on low speed until just combined. Stir in coconut and gently fold in blueberries. Spoon batter into cups and smooth tops.

Bake on the middle rack about 20 minutes until a tester inserted comes out clean and edges are golden brown. 

Makes 12 Muffins. 

They barely lasted long enough to get these pictures!

I think the next time I make this I might replace some of the heavy cream with coconut milk for added coconut flavor, or maybe try mixing the 2 and go with a strawberry banana coconut. Oooh wild and crazy me!
